From Ice Cream to Hard Candy

The Jolly Rancher Company was founded in 1949 by Bill and Dorothy Harmsen in Golden, Colorado. They chose the name Jolly Rancher because it evoked fun and friendly western imagery. (I always thought it was a play on “Jolly Rodger.” Turns out, they named the company after cowboys, not pirates!) 

An unfortunate and unseasonably rainy summer left the fledgling ice cream shop in a tough spot financially. With the cold mountain winter blowing in, they knew they’d have to pivot or perish. The company survived the winter by selling chocolates from a business in Denver, as well as their own. This proved to be a winning strategy as they not only survived the winter – they thrived come spring!

Their success quickly led to franchising stores in Colorado, Wyoming, and Nebraska – all supplied with the Harmsens' own chocolates! With their chocolate and candy sales booming, and success secured, Bill and Dorothy were able to begin experimenting with different candies. Once they landed on a certain recipe for a certain hard candy, the rest is history!

From the humble barn-brewed apple, grape, and cinnamon Fire Stix grew a candy empire with dozens of flavours around the world and hundreds of products from candy to car wraps!

Get Creative with Jolly Rancher Candies

Love the taste of Jolly Rancher Hard Candies, but not living for the shape? Do you wish their forms were a little more festive? Do you have a metal cookie cutter that would make the perfect mould for a beautiful shiny glassy piece of candy? Well you’re in luck!

Unlike other hard candies that become cloudy and weird when heated, Jolly Rancher Hard Candies are famous for staying crystal clear when melted or even baked! This makes them uniquely useful for making stunning stained glass candies and cookies! 

 

How to Make Jolly Rancher Stained Glass Cookies

These stained glass cookies are as beautiful as they are delicious! Add a touch of glass to your holiday baking. These candy panes can be added pain-free to your favourite sugar cookie or gingerbread recipe! If you don’t have a go-to sugar cookie recipe yet, you can use ours!

Ingredients

  • 1 cup packed brown sugar

  • 2⁄3 cup butter

  • 1 egg

  • 2 teaspoons vanilla extract

  • 2 1⁄2 cups all-purpose flour

  • 1/2 teaspoon baking powder

  • 1 teaspoon cinnamon

  • 1/2 teaspoon allspice

  • dash of nutmeg

  • 4 dozen Jolly Rancher Hard Candies

Instructions

  1. Put the brown sugar and butter into a large bowl. Cream together until light and smooth.

  2. Break the egg into a small bowl, add the vanilla, and whisk well with a fork. 

  3. Pour half of the beaten egg mixture into the butter and sugar, mixing thoroughly before adding the rest. This helps prevent the eggs from clumping together in the mix.

  4. In a separate bowl, lightly mix the flour, baking powder, cinnamon, allspice, and nutmeg together to evenly distribute the spices.

  5. Sift the dry ingredients through a fine mesh strainer into the wet ingredients, then mix everything together until smooth and homogenous.

  6. Divide the dough into two halves.

  7. Place each dough half between 2 pieces of parchment paper, and roll out into 1/4 inch thick sheets.

  8. Keeping the sheets of dough between the parchment, place them in the fridge on a baking sheet or cutting board. Chill for 15 minutes.

  9. Once chilled, remove the top piece of parchment paper, and use a large cookie cutter to cut out your cookie shapes. Remove scraps of dough from around the cookies. (The scraps can be rolled out into a new sheet to be cut, or baked as they are for craggly cutoff cookies.)

  10. Then, use a smaller cookie cutter to cut out the centre of the cookies. Use a toothpick to help remove the centre if needed. 

  11. Return sheets to the fridge while you prepare the Jolly Ranchers.

  12. Optional: If you want your cookies to be ornaments, poke a hole in each cookie by pressing a drinking straw or the point of a chopstick through the dough where you want to hang it. Make sure there is enough dough around the hole to avoid breakage.

  13. Divide your Jolly Ranchers by colour into resealable bags. Squeeze out the air, zip the tops, and carefully (yet confidently!) crush with a rolling pin or mallet until the biggest pieces are about the size of playground pebbles.

  14. Carefully spoon the crushed Jolly Ranchers into the cookies’ cutouts so the candy is just shy of level with the top of the cookies. 

  15. Place the decorated cookies back in the fridge while your oven preheats to 350°F.

  16. Bake the cookies on the middle rack for 10-12 minutes – until the candy is melted and cookie edges are just turning golden.

  17. Once done, take the baking sheets from the oven and place them on cooling racks without removing the cookies.

  18. Once completely cooled, carefully remove the cookies and plate them. (If a cookie is stuck to the parchment, cut that cookie off the sheet with scissors, and carefully peel away the paper.)

  19. Admire the beauty of your creation. 

  20. Take a photo for the fam n’ ‘gram.

  21. Enjoy!

To store, place them into airtight containers with parchment paper between the layers to prevent sticking.

 

How to Make Jolly Rancher Stained Glass Candy

It’s just like making the stained glass cookies, but without the cookies! 

  1. Preheat your oven to 350°F. 

  2. Crush the Jolly Rancher Hard Candies as described above. 

  3. Line a baking sheet with a silicone baking mat or parchment paper. 

  4. If using cookie cutters as moulds: apply a thin coat of oil or cooking spray to the inside.

  5. Spoon the crushed candy into the mould – completely covering the bottom in a single-ish layer. The candy will spread and thin a little as it melts to the mould’s shape, so make it just a touch higher than you want the final product to be.

  6. If not using a mould: pile the crushed candy in the middle of the baking sheet. 

  7. Evenly spread out the candy until it’s twice the height of your desired final thickness. Keep the pile a couple inches away from the edges of the pan so it doesn’t flow under the baking mat or parchment paper.

  8. Place the baking sheets on the middle rack and bake for 5-7 minutes or until the candy is completely melted. 

  9. Once melted, remove from the oven and let cool completely.

  10. If you want your un-moulded candy to break into certain shapes, like squares or triangles, you can use a bench scraper, metal spatula, or knife to score lines into the candy while it’s still warm. Once cooled, snapping the candy along the lines should be a cinch!

  11. When the candy is completely cool, gently remove them from the moulds or snap them off the parchment paper!

  12.  If all went well, you should have a collection of crystal clear stained glass candy!

  13. If you want to mix it up and make some Candy Sea Glass, simply rub the candy with a little confectioner’s sugar to get that wonderful cloudy tumbled effect!
