These delicate cakes are made with Amaou strawberries- the world famous Japanese strawberries! Grown in the Fukuoka prefecture in southern Japan, the "king" of Japanese strawberries are cared for like royalty. Grown in greenhouses, they are carefully watered, their leaves delicately raised to the sky with bamboo supports, and kept at an exacting temperature and light level to ensure they grow into the perfect berry.

Their name comes from an acronym using the desired characteristics of the berries: Amai (sweet), MArui (round), Okii (big) and Umai (tasty). Like many other premium Japanese fruits, there is a careful grading system for finding the best of the best of these incredible strawberries. Top-graded amaou strawberries can sell for $10 EACH!
