About Willie's Cacao
Willie's cacao journey all began with a simple love for adventure, which brought him to the beautiful land of Venezuela and lead him to buy the Hacienda El Tesoro (which roughly translates to the plantation of treasure!) back in 1996.
High in the breathtaking cloud forest, this plot of land is home to 20,000 cacao trees and is so bio-diverse that it lays claim to 3% of the world's flora and 7% of the world's bird species. Willie would often be tripping over so many plants and fruits he had never heard of before that he began bringing them home to experiment with, making cream infusions of virtually every edible thing you could find.
Cacao growers in most of the world today produce hybrid strains that grow bigger crops, but at the cost of flavour and aroma. Unaccepting of nothing but the finest, when Willie was first replanting the hacienda after having purchased it, he made it his mission to find beans with pure criollo characteristics. Eventually, he found a small plantation of 1,000 cacao trees within a coffee area that had been isolated. Without the ability to cross-pollinate with other plantations, Willie realized that these were the ones. Few things give him greater pleasure than watching it dawn on someone that all the flavour of the chocolate they're tasting comes simply from the cacao.
